The Super Bowl is Sunday and it's time to consider some recipes for the Big Game party
Chipped Beef Cracker Spread
Need an appetizer with a kick? This cracker spread, from the Association for Dressings & Sauces, is perfect for any festive gathering.
3 1/2 oz. dried chipped beef
2 Tbsp. butter
8 oz. cream cheese, at room temperature
2 tsp. yellow mustard
1/4 cup deli-style horseradish sauce
1/2 cup green onions, finely chopped
Finely chop the dried chipped beef and saute in butter until it sizzles. Mix together the cream cheese, yellow mustard and horseradish sauce until smooth and creamy. Stir the chipped beef and green onions into the cheese mixture. Spoon the spread into a serving dish and chill before serving. Serve with assorted crackers.
Grand Champagne Cocktail
Try this stunning cocktail courtesy of Bobby Flay from "Boy Meets Grill." This easy recipe from foodnetwork.com takes just a few minutes to assemble and yields four cocktails.
4 shots orange-flavored liqueur (recommended: Grand Marnier)
4 teaspoons honey
4 fresh strawberries, tops trimmed
1 bottle Champagne, well chilled
4 chilled Champagne flutes
Add the orange-flavored liqueur, the honey and the strawberries to a food processor and process until smooth. Fill the chilled glasses halfway with the strawberry mixture and then fill the rest of the glass with Champagne. No need to garnish.
Brisket Sliders with Pickled Red Onion and White Cheddar Cheese
For the brisket:
3 lbs. beef brisket
1 16-oz. can beef broth, low sodium
Salt and black pepper to taste
Preheat oven to 400 F. Season brisket with salt and pepper. Place in a medium casserole dish and roast for 30 minutes. Add beef broth, cover with foil and reduce temperature to 300 F. Cook for two hours until tender.
For the pickled red onions:
3 large red onions, sliced thin
2 cups red wine vinegar
3/4 cups granulated white sugar
2 Tbsp. salt
Mix vinegar, sugar and salt until sugar dissolves. Cover sliced onions with the vinegar mixture and let stand 30 minutes.
To assemble these 12 sliders from the Association for Dressings & Sauces, slice the brisket thinly and coat with sauce. Slice potato rolls in half and toast lightly. Place a slice of white cheddar cheese on bottom half of the roll and a few slices of brisket on the cheese. Top with pickled red onions and enjoy.
